With its long wooden bar and cafe-style atmosphere, Hifumi is not exactly a typical Japanese noodle shop. It also breaks new ground with its recipes. The noodles served here are a cross between Japanese soba and its more flavorful rival, ramen. The toppings are mixed as well. At most ramen shops you can top your noodles with minced garlic or ginger; here it is that soba favorite, a dash of shichimi (seven types of spices ground into a hot pepper),that prevails. Be sure to come early in the evening, however, as the place closes at 7pm.
