The secret to good tonkatsu (deep-fried pork) is a crispy outside with a soft juicy inside. Umehachi have the secret just right. Bring out the full taste of the pork by eating it with cabbage. Each serving is accompanied by katsu sauce, rice, miso soup, and pickled vegetables. To the uninitiated, this may not look like a lot of food, but it will tame almost any hunger.
