Back home they are called sardines, those unspeakable canned whatsits, with an influence spreading only as far as that common metaphor used for subway commuters. In Japan however, they are iwashi, a different fish altogether, served as sashimi, or grilled, or rolled up in mint leaves, there are too many delicious combinations to name. If you come to Uosai, you can try these out, and afterwards you may feel sad that these wonderful fish are relegated to such a lowly place in the West. Uosai serves everything from sashimi to tempura and it is all delicious.
